  5. Mix until well combined.

  6. Heat oil in a large skillet over medium-high heat.

  7. Drop about ¼ cup of the mixture into the pan and flatten slightly.

  8. Cook for 3–4 minutes per side until golden brown and crispy.

  9. Transfer to a paper towel-lined plate.

  10. Serve hot with sour cream, applesauce, and fresh chives (optional).
