Squeeze out as much liquid as possible.
Transfer to a large bowl.
Add grated onion, eggs, flour, salt, black pepper, and garlic powder.
Mix until well combined.
Heat oil in a large skillet over medium-high heat.
Drop about ¼ cup of the mixture into the pan and flatten slightly.
Cook for 3–4 minutes per side until golden brown and crispy.
Transfer to a paper towel-lined plate.
Serve hot with sour cream, applesauce, and fresh chives (optional).
