Red Beans Cookies
  1. Preheat the oven to 180°C/350°F and linea baking sheet with baking parchment.

  2. In a small bowl, whisk together the ground flaxseeds and 4–5 tablespoons water and set aside for 5–10 minutes to form a slurry.

  3. Combine the kidney beans, peanut butter, maple syrup, baking powder, cacao powder and flaxseed slurry in a food processor and blend until a dough forms. Stir in the chocolate chips.

  4. Using an ice cream scoop or two spoons, portion out the dough into eight cookies and place them on the prepared baking sheet. If you like, top the cookies with more chocolate chips and some sea salt flakes.

  5. Bake in the oven for 15 minutes, then remove from the oven and allow to cool completely before enjoying.
