  1. Preheat the oven to 445°F.

  2. Cut the spaghetti squash in half and stab it with a fork.

  4. Roast for 35-40 minutes, until tender.

  5. Blend cottage cheese, coconut milk, and salt until smooth and creamy.

  6. Heat olive oil in a large pan over medium heat.

  7. Add onion and garlic, sauté until fragrant.

  8. Stir in mushrooms and tomatoes, cooking until softened.

  9. Add spinach and Italian seasoning, stirring until wilted.

  10. Add the spaghetti squash into the pan with the veggies.

  11. Pour the creamy sauce over the top and mix everything well.
