Peanut Butter U0026amp; Jelly Cookies
  1. Preheat the oven to 350 degrees F and line two cookie sheets with parchment paper. Set aside.

  2. In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set aside.

  3. In a separate, large bowl, use an electric mixer to cream together the butter and the sugar. About 2 minutes.

  4. Scrape down the sides of the bowl then add in the eggs and and vanilla. Mix to combine.

  5. Pour the dry ingredients into the wet mixture and mix until a soft, fully combined dough forms. The dough will be a little sticky – don’t worry.

  6. Roll the dough into 3 tablespoon sized balls. Divide the 3 tablespoon sized dough balls in half. One at a time, flatten one half of the cookie dough into a neat circle on a prepared pan, about 4" diameter circles.

  7. Spoon or pipe about 1 ½ teaspoons of peanut butter in the center of each flattened cookie then top the peanut butter with about 1 ½ teaspoons of jelly. Repeat this step for each cookie.

  8. Use the other half of the cookie dough to top the filled cookie with. Gently flatten the dough in your hands to about 4" in diameter to match the size of the other half then place the dough on top and pinch the seams together to close the edges.

  9. Repeat these steps for each cookie. Bake for 10-12 minutes or until the edges are just barely golden brown. As soon as the cookies come out of the oven, use a uncrustable cookie stamp to press the edges together. For the uncrustable kit I got on Amazon, click here. Let the cookies sit on the pan for about 2 minutes after baking then transfer to a wire rack to cool completely.

  10. Allow the cookies to cool completely before decorating.

  11. To make the peanut butter icing, cream together the peanut butter and confectioner's sugar while adding the vanilla and heavy cream one tablespoon at a time. I used 5 tablespoons of heavy cream but you may need 6 tablespoons to thin it out more.

  12. Whisk the icing until it is completely smooth.

  13. Once the cookies have cooled completely, place a dollop of peanut butter icing on the cookie and use a butterknife or offset spatula to swirl the icing on top of the cookie. Then spoon a small amount of strawberry jam on top of the peanut butter icing.
