Boil a pot of water (brown rice needs a lot of water so make sure you have plenty in the pot). Add rice to the pot of boiling water. Boil, uncovered, for 25-30 minutes, until grains are tender. Drain well through a sieve.
Dice onion. Heat oil in a fry pan on medium-high. Cook pork, onion, BBQ seasoning spices and a pinch of salt for 6-9 minutes, until browned. Stir through BBQ sauce and continue to cook for 1 more minute.
Drain pineapple and reserve 1 tbsp of pineapple juice. Heat oil in a second fry pan on medium-high. Cook pineapple for 3-4 minutes, until browned.
Thinly slice cucumber. Peel carrot into ribbons. Toss cabbage in a bowl with vinegar and reserved pineapple juice.
Build your poke bowl with rice, pork, pineapple, and veggies. Sprinkle over sesame seeds. Enjoy!
