  1. Fill a large pot with water, salt, and boil

  2. Prep: cut bacon into small pieces, grate Parmesan, crack eggs, then mix Parmesan and eggs together

  3. Fill a medium pot with water, salt generously, and set to boil. Once boiling, add pasta and cook according to package instructions. If pasta finishes before the bacon is done, remember to save a cup of pasta water before draining

  4. In a cold, medium skillet, add bacon and set to medium low. No need to stir very often. Cook until crispy.

  5. Add pasta to bacon and toss to coat with grease. Pour hot pasta water slowly to eggs and Parmesan, whisking continuously, then add mixture to the pasta. Mix until sauce thickens.

  6. Serve warm with garlic knots or bread and salad
