Combine ground chicken with ranch seasoning, green onion, salt, pepper, shredded Cheddar cheese, and Buffalo sauce
Mix well and spread the mixture into a thin layer all the way to the edges of the flour tortillas
Heat a pan or griddle and add oil
Place tacos meat side down and cook for about 5 minutes until chicken is cooked through
Flip tacos and cook for another minute
Combine shredded cabbage, celery, carrots, and blue cheese crumbles in a bowl
Toss the slaw with red wine vinegar, olive oil, salt, pepper, and sugar
Add the slaw to the tacos and drizzle with additional Buffalo sauce
Serve and enjoy
