Savory Buttermilk Biscuits
  1. Grate all of the butter on a microplane and put it in the freezer.

  2. Mix the flour, baking powder, and salt in a bowl. Fold in the frozen butter shavings. Mix the cold buttermilk into the flour mixture, half at a time, until incorporated into a wet dough.

  3. Dump it out onto a lightly floured board and gently gather it together into a ball. Use a rolling pin to roll the dough out into a rough rectangle, then use a bench scraper to fold the dough onto itself. Turn 90 degrees and repeat 4 to 5 times. The dough will become smooth.

  4. Roll into a 4 by 8 inch rectangle and use the bench scraper to cut it into 8 even pieces. Cover and put into the fridge, overnight if desired.

  5. When ready to bake, remove from the fridge. Brush with egg wash and sprinkle with salt. Bake at 375F for 35 mins.
