Parsnip Puree
  1. Peel parsnips and potatoes, then dice them into 1" cubes

  2. Boil in water with salt until soft.

  3. Strain and discard water.

  4. In a separate container add butter parmesan, and cooked parsnips/potatoes.

  5. Allow a few minutes for the butter and parmesan to melt, then add cream and blend until smooth.

  6. Add salt and pepper to taste.
