Prepare the apricots and place in a small saute pan
Taste a slice, and add a pinch of sugar to apricots, if needed. Cover, and bake at 350F for about 8 to 10 minutes until they begin to sweat.
Remove from oven and uncover. Drizzle apricots with honey, and sprinkle thyme leaves over apricots. Cover again, and let everything cool. Refrigerate if making ahead.
Serve St Andre cheese with the apricots and bread
Finish with coarse sea salt
