Boil the potatoes and cauliflower florets.
Heat oil in a pan and fry the boiled cauliflower and potatoes for 2-3 minutes.
Add turmeric powder and toss.
In the same pan, heat oil and ghee. Add cumin seeds, cloves, cinnamon, and bay leaves.
Add sliced onion and sauté until soft.
Add chopped green chillies, ginger, and garlic. Sauté.
Add chopped tomatoes and let them cook until soft.
Add coriander cumin seed powder, red chili powder, garam masala powder, fenugreek leaves, and sugar.
Add the fried potatoes and cauliflower. Toss for 2 minutes.
Add water and salt. Cover and cook for 2 minutes.
Mash a few pieces of potato to thicken the gravy.
Garnish with coriander leaves.
