Wash and dry your strawberries then use a small pairing knife to carve out a small portion of the center. Be careful not to cut through the bottom of the strawberry. You do not need to carve out a lot. Repeat this step for each strawberries then set them aside.
In the bowl of a stand mixer fit with the paddle attachment, or in a large bowl with an electric mixer, cream together the cream cheese and butter. If the cream cheese is too cold it will create lumps in your frosting. You can always pop the cream cheese in the microwave for 15-30 seconds to help this.
Add the salt and vanilla extract to the cream cheese and butter mixer then gradually add the confectioner's sugar while mixing on low speed. Be sure to scrape down the sides and bottom of the bowl as you mix to ensure everything is combining evenly.
Once the frosting has come together into a nice soft and smooth texture, transfer it to a piping bag fit with a star tip.
One at a time, pipe a dollop of frosting in the center of each strawberries. If the frosting isn't sticking well in the strawberry, try dabbing the center of the strawberry with a paper towel before piping. Sprinkle on graham cracker crumbs to complete. Repeat these steps for each strawberry.
