Season the chicken breasts with salt, pepper, and Italian seasoning.
Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer.
Add the Parmesan cheese and stir until melted and the sauce starts to thicken.
Toss in the sun-dried tomatoes and spinach, cooking until the spinach wilts.
Return the chicken to the skillet, spooning the sauce over it. Let it simmer for 2-3 minutes to reheat the chicken and meld the flavors.
