Preheat your oven to 360°F (180°C). Line a baking sheet with parchment paper so the cookies don’t stick.
Add the pumpkin puree, maple syrup or honey, and oats to a large mixing bowl. If desired, mix in the cinnamon and vanilla extract.
Stir everything together until you have a thick, well-combined cookie dough. If the mixture seems too wet, mix in a few extra oats. If it feels too dry, add a little more pumpkin puree until you reach the right consistency.
Divide the mixture into 8–10 equal portions and arrange them on the prepared baking sheet, leaving a little space between each one.
Gently press each portion down to form a cookie shape. These cookies won’t spread much while baking, so shape them before they go into the oven.
Bake for 8–10 minutes, or until the cookies are set and lightly golden.
Remove from the oven and let the cookies cool completely on the baking sheet before serving.
