Macro Friendly Steak Chimichurri Bean Salad
  1. Cook the beef sirloin steak to desired doneness

  2. Mince the garlic cloves

  3. Chop the shallot

  4. Chop the parsley and cilantro

  5. Combine red wine vinegar, olive oil, lemon juice, minced garlic, chopped shallot, parsley, cilantro, red pepper flakes, and sea salt to make chimichurri sauce

  6. Drain and rinse the garbanzo beans and great northern beans

  7. Combine the beans, roasted red peppers, and cherry tomatoes in a large bowl

  8. Slice the cooked steak and add to the bean mixture

  9. Pour the chimichurri sauce over the salad and toss to combine

  10. Crumble the queso fresco on top

  11. Let sit in the refrigerator for flavors to meld before serving
