Cook the beef sirloin steak to desired doneness

Combine red wine vinegar, olive oil, lemon juice, minced garlic, chopped shallot, parsley, cilantro, red pepper flakes, and sea salt to make chimichurri sauce
Drain and rinse the garbanzo beans and great northern beans
Combine the beans, roasted red peppers, and cherry tomatoes in a large bowl
Slice the cooked steak and add to the bean mixture
Pour the chimichurri sauce over the salad and toss to combine
Crumble the queso fresco on top
Let sit in the refrigerator for flavors to meld before serving
