Cut up the sausage into half-inch chunks.
Finely chop a half an onion and a clove of garlic.
In a deep saucepan, cook the onion with 1 tsp olive oil and a pinch of salt until yellowed on medium-high heat.
Cook in the garlic for a minute.
Reduce to medium heat. Add the ground meat in the pan and cook until all the red is gone. Cover during cooking. While cooking, set the stove to 375F.
Add in sausage and brown the meat. Remove the saucepan from heat and leave it uncovered while preparing other ingredients.
Dice all of the veggies.
Put all of the veggies (except green onion) into the turkey pan, in separate sections. The beans should be turned over in the can and then removed once all the veggies are in to support it. Meat goes into the turkey pan last.
Remove the cans, leaving the beans behind.
Spread sauces and green onions on top.
Cover with tin foil and then put the turkey pan in the oven. Cook for at least 45 minutes, and check every 20 minutes until the veggies are cooked.
Serve on with bread, chips, or on rice.
