Add oil to to pot on medium heat, next add the onions, curry leaves and whole spices, fry until translucent then add the Green masala or garlic/ginger and garlic paste and stir for 30 seconds to a minute.
Add the masalas and fry for a minute
Add the mutton, stir to coat the lamb with the spices, add the tomatoes and salt give it another stir. Allow to cook.
Once the tomatoes are cooked add water and allow the mutton to cook, too me 1.5 hours.
Then add the potatoes but before the oil settles, switch off the heat – allow it to stand and develop a beautiful gravy, once cooked garnish with chopped curry leaves and dhaniya.
