  1. Begin by marinating the chicken thighs with the hot pepper paste or tomato paste, yogurt, lemon juice, and olive oil, along with the shawarma spices. Ensure the chicken is well coated in the marinade.

  2. Allow the chicken to marinate for at least a few hours, but preferably overnight for the best flavor.

  3. Preheat your oven to high broil and place a sheet tray inside to heat for about 10-15 minutes.

  4. Once the tray is hot, add the beef tallow or neutral oil to it, then spread the marinated chicken in a single layer on the tray.
