Toast the bread.
Spread with butter if using.
Top with the whipped cottage cheese mixture.
Sprinkle over the remaining monkfruit sweetener and cinnamon mixture.
Air fry at 200°C (400°F) for around 5 minutes or until golden and bubbling.
