Sirloin Tip Roast
  1. Preheat the oven to 180C/350F.

  2. Rub the roast with olive oil. In a small bowl, whisk the salt, pepper, parsley, dried thyme, dried rosemary, and garlic, then rub it all over the beef.

  3. Place the meat in a roasting pan or baking dish and roast the beef for 45-50 minutes, or until it reaches a medium-rare temperature of 135F.

  4. Remove the beef from the oven and place it on a sheet of tin foil and loosely cover it. Let the meat rest for 10-15 minutes before carving against the grain.
