Combine melted butter (slightly cooled) and sugars
Add miso, maple and vanilla and mix
Add egg and egg yolk
In a separate bowl, combine all dry ingredients (flour, baking soda, cornstarch, salt)
Fold dry ingredients into wet mixture until just combined, do not over mix
Add in chopped chocolate
Scoop out cookies (170g each for giant cookies, makes about 5-6 cookies)
Top with flaky salt
Bake at 375°F for 15-18 minutes
Let cool on the pan for 10 minutes
Transfer to cooling rack for an additional 10-15 minutes
Eat and enjoy
