Braised Chicory (Endives)
  1. Remove the blemished outer leaves, trim the roots and place the chicory in a braising pan or oven dish.

  2. Add lemon juice, stock and lightly season. Cover with buttered cartouche and lid.

  3. Cook in the oven at 175°C for 1 hour. Remove liquid and allow to stand.
