Chicken Satti - Tausug Grilled Chicken Skewers With Spicy Savory Sauce
  1. Mix chicken with aromatic paste and all ingredients under chicken skewers

  2. Skewer 3-4 pieces per stick

  3. Grill the skewers over charcoal, basting with coconut milk, until cooked

  4. For the sauce, sauté ingredients under Satti sauce and infuse with chicken broth

  5. Strain the sauce before adding patis, coconut milk, and peanut butter

  6. Thicken the sauce with potato starch slurry

  7. For the tamu, wash and soak rice in water for 20 minutes

  8. Drain rice, then cook in a pan with water, oil, and salt

  9. Stir until the water evaporates and the rice is partially cooked

  10. Wrap the rice in banana leaves and secure with string

  11. Boil the wrapped rice for 20-30 minutes

  12. Serve skewers over rice, add satti sauce and enjoy
