Almond Thumbprints
  1. In a mixing bowl, combine the flour, almonds, confectioners’ sugar, ¼ cup plus 1 tablespoon granulated sugar, baking powder and salt.

  2. Cream butter in a stand mixer until light and fluffy, then add remaining sugar before incorporating egg and vanilla.

  3. Slowly add the flour mixture to the wet ingredients until fully incorporated.

  4. Refrigerate the dough until firm, about 1 hour or overnight.

  5. Roll dough into balls and make a depression in the center of each cookie.

  6. Bake cookies, re-form depressions, fill with preserves, and continue baking until lightly golden brown.

  7. Cool on wire rack before storing in an airtight container.
