Chicken Milanese With Whipped Feta, Roasted Tomatoes & Lemon Basil Oil
  1. Preheat oven to 400°F (200°C)

  2. Season chicken with salt, black pepper, oregano, and garlic powder

  3. Coat with breadcrumbs and place on a baking sheet. Drizzle with olive oil

  4. Bake for 18–22 minutes until golden and crispy

  5. Toss cherry tomatoes with olive oil and salt, then roast for 15–20 minutes until blistered

  6. In a blender, mix feta, Greek yogurt, olive oil, and lemon juice until smooth

  7. Blend basil with olive oil and lemon zest to make lemon basil oil

  8. Spread whipped feta onto a plate

  9. Place chicken on top, add roasted tomatoes, and drizzle with lemon basil oil

  10. Garnish with fresh basil and serve warm
