Meatball & Chickpea Curry With Quorn Swedish Style Balls
  1. Slice up your veggies and sweat them in vegetable oil for 5 minutes

  2. Add the minced ginger, garlic and tomato paste

  3. Add your spices with a splash of water and cook for a further minute

  4. Add your Quorn Swedish Style Balls and chickpeas and mix well

  5. Add your chopped tomatoes and around 350ml of coconut milk

  6. Mix well and bring to a simmer

  7. Cover and cook for around 20 minutes, stirring occasionally to prevent sticking

  8. Serve with a drizzle of leftover coconut milk, fresh coriander and mango chutney with a side of rice

  9. Store in airtight containers in the fridge and reheat until piping hot when ready to eat
