Slice up your veggies and sweat them in vegetable oil for 5 minutes
Add the minced ginger, garlic and tomato paste
Add your spices with a splash of water and cook for a further minute
Add your Quorn Swedish Style Balls and chickpeas and mix well
Add your chopped tomatoes and around 350ml of coconut milk
Mix well and bring to a simmer
Cover and cook for around 20 minutes, stirring occasionally to prevent sticking
Serve with a drizzle of leftover coconut milk, fresh coriander and mango chutney with a side of rice
Store in airtight containers in the fridge and reheat until piping hot when ready to eat
