1 T New Mexico Red or Ancho Chile Powder
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 tsp black pepper
1 lb skirt steak
1 T olive oil
8 flour tortillas
2T lime juice
1 small cucumber thinly sliced
2 c shredded monterey jack
1 Combine first 5 ingredients and mix well. Brush steak on both sides with oil, then dust all sides with spice blend.
2 Heat grill to medium-high. Grill steak until well charred on outside and slightly pink in center or until meat thermometer registers 145 degrees F when inserted in middle, 3-5 minutes per side. Transfer meat to cutting board and let rest 5 minutes. Cut against grain into half inch strips and then into half inch pieces.
3 Divide steak among tortillas. Sprinkle with lime juice. Top with cucumber and cheese.
