Salmon Wellington
  1. Welcome to Wellingtons, today we are making a salmon Wellington! Perfect to elevate every special occasion!

  2. Orange crêpes: Mix the orange juice, milk, flour, eggs, salt, pepper, chives and dill. Bake the crêpes in butter.

  3. Filling: Mix the cream cheese, spinach, asparagus, dill, chives, capers, shallots and orange zest. Season with salt and pepper.

  4. Salmon Wellington: Season the salmon with salt and pepper. Place the salmon on the puff pastry, top with the filling and wrap the pastry around the salmon. Brush with egg yolks.

  5. Orange beurre blanc: Sauté the shallot, add the orange zest and juice, white wine. Reduce by half. Whisk in the cold butter until emulsified. Season with salt.
