  1. Mix all ingredients (except the pastry) together in a bowl and then lay out your puff pastry sheet.

  2. Fold the pastry sheet in half so you know where the centre fold will be and put all the spinach mix onto one side of the pastry sheet. It might seem like there's a lot of spinach but it will wilt down so just spread it out evenly and fold on top the other half of the pastry.

  3. Press it down

  4. It's optional to brush the top with an egg and sprinkle seeds.

  5. Place into an oven preheated at 180° for 20 to 30 minutes until it's golden and cooked through.

  6. Little tip - you can freeze the entire bag of spinach and then crush it when frozen so easier to pack down and also smaller pieces of spinach to chew when cooked
