Roast red bell peppers and garlic at 450°F for 30-50 mins
Make Red Pepper Alfredo Sauce by blending cottage cheese, cream cheese, parmigiano reggiano, milk, roasted red peppers and roasted garlic
Add ~1 cup pasta water to slow cooker
Cook pasta to 50% doneness and add to slow cooker
Garnish with chopped parsley
