In a large mixing bowl, cream together the sugar, egg, salt, and shortening until smooth and well combined.
In a separate bowl, whisk together the flour, baking soda, ground cloves, ground ginger, and ground cinnamon.
Gradually add the dry ingredients to the creamed mixture, mixing well after each addition until a dough forms.
Roll teaspoon-sized portions of the dough into balls.
Roll each ball in additional sugar to coat.
Place the sugared dough balls on ungreased baking sheets, spacing them about 2 inches apart.
Bake in the preheated oven for 5 to 6 minutes, or until the bottoms are lightly browned but the tops remain light. Do not overbake to ensure a chewy texture.
Remove from the oven and allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
