Irish Ginger Snaps
  1. Preheat your oven to 350°F (175°C).

  2. In a large mixing bowl, cream together the sugar, egg, salt, and shortening until smooth and well combined.

  3. In a separate bowl, whisk together the flour, baking soda, ground cloves, ground ginger, and ground cinnamon.

  4. Gradually add the dry ingredients to the creamed mixture, mixing well after each addition until a dough forms.

  5. Roll teaspoon-sized portions of the dough into balls.

  6. Roll each ball in additional sugar to coat.

  7. Place the sugared dough balls on ungreased baking sheets, spacing them about 2 inches apart.

  8. Bake in the preheated oven for 5 to 6 minutes, or until the bottoms are lightly browned but the tops remain light. Do not overbake to ensure a chewy texture.

  9. Remove from the oven and allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
