Add ricotta, minced charred leek, Parmigiano, lemon zest, and chives.
Mix until smooth.
Season generously with salt & pepper.
If the filling feels too firm, add ½–1 tsp confit oil at a time. If too loose, add more Parmigiano.
Refrigerate 1–2 hours to firm up before assembly.
Combine flour + salt.
Add eggs and mix until shaggy.
Knead 8–10 minutes until smooth and elastic.
Wrap and rest 30 minutes (or refrigerate up to 24 hours).
Roll pasta sheets thin (setting 6–7 on pasta roller).
Place 2–3 tbsp filling mounds spaced widely apart.
Brush edges lightly with water.
Top with another sheet; press out air pockets.
Cut into 4–5 inch rounds or squares.
Dust heavily with semolina, not flour.
Place ravioli on a semolina-covered tray.
Cover loosely with plastic wrap (avoid direct contact).
Refrigerate up to 6 hours.
Cook directly from cold.
Arrange ravioli on a semolina-dusted sheet pan.

Freeze uncovered for 1–2 hours until solid.
Transfer to airtight container or freezer bag.
Store up to 2 months.
Bring water to a gentle boil.
Cook ravioli 5–6 minutes until pasta is tender.
Do not thaw before boiling.
Sauce
Melt butter over medium heat.
Let it foam and turn lightly brown and nutty.
Add chives + pinch of lemon zest (optional).
Swirl to emulsify.
Put one large raviolo in the center of each warm plate.
Spoon chive brown butter generously over top.
Add crispy fried leeks for height and crunch.
Finish with Parmigiano and a micro-grate of lemon zest.
