Wash the carrots and place them on parchment paper on the baking sheet.
Drizzle them with oil, salt, pepper, and thyme.
Roast carrots at 400 for 20-30 minutes, depending on the size of your carrots.
While the carrots are in the oven, place the goat cheese, chili onion crunch, and honey in the mixer.
Add 3-6 Tbsp water to get the cheese smooth and whipped.
Place everything in a bowl and whip it together until thoroughly combined.
Serve the whipped hot honey goat cheese on the bottom of the serving plate or alongside the carrots.
