Olympic Chocolate Muffins
  1. Preheat to 350°F, then increase to 425°F when muffins go in.

  2. Combine sugar, egg, oil, coffee, vanilla, and salt.

  3. Sift in baking soda, then flour and cocoa. Stir in warmed buttermilk.

  4. Line muffin tin and fill generously with batter. Top with chocolate chunks.

  5. Bake at 425°F for 7 minutes, then 350°F for 10–12 minutes.

  6. Let muffins cool while making ganache.

  7. Pour warm cream over chopped chocolate, let sit 1 minute, then stir smooth.

  8. Use knife to remove muffin centers. Pipe in ganache until filled.

  9. Enjoy warm or cooled with a sprinkle of sea salt or drizzle of syrup.
