Combine the dry ingredients in a bowl.
Add the wet ingredients and bring together.
Shape the dough into 4 squares with well-oiled hands and a well-oiled bench scraper on parchment/silpat.
When about ½ inch thick, make diagonal lines from corner to corner with a bench scraper to create an X shape.
Bake at 300°F for 1 hour, or at 375°F for 45 minutes for a more airy and flaky texture.
