Brownie Biscoff Cheesecake Bars
  1. Line a 9x13" pan with parchment paper

  2. Pour brownie batter into prepared pan and bake according to box directions

  3. Let brownies cool completely before adding toppings

  4. Heat ¾ cup bittersweet chocolate chips and 3 tablespoons heavy cream in a microwave safe bowl for about 60 seconds, stirring until smooth

  5. Let ganache cool slightly, then spread evenly over cooled brownies

  6. Refrigerate bars for 15-20 minutes until ganache is set

  7. Heat 1 cup Biscoff cookie butter in microwave for 30-40 seconds to make it easier to spread

  8. Spread Biscoff cookie butter over the ganache layer

  9. Refrigerate for a few minutes before adding cheesecake topping

  10. Beat 2 cups heavy cream, ⅔ cup powdered sugar, and 1 teaspoon vanilla until soft peaks form

  11. Add 8 ounces room temperature cream cheese and beat until medium-stiff peaks form

  12. Spread whipped cheesecake mixture on top of bars

  13. Drizzle with melted Biscoff and sprinkle with crushed Biscoff cookies

  14. Refrigerate until ready to serve
