Pour brownie batter into prepared pan and bake according to box directions
Let brownies cool completely before adding toppings
Heat ¾ cup bittersweet chocolate chips and 3 tablespoons heavy cream in a microwave safe bowl for about 60 seconds, stirring until smooth
Let ganache cool slightly, then spread evenly over cooled brownies
Refrigerate bars for 15-20 minutes until ganache is set
Heat 1 cup Biscoff cookie butter in microwave for 30-40 seconds to make it easier to spread
Spread Biscoff cookie butter over the ganache layer
Refrigerate for a few minutes before adding cheesecake topping
Beat 2 cups heavy cream, ⅔ cup powdered sugar, and 1 teaspoon vanilla until soft peaks form
Add 8 ounces room temperature cream cheese and beat until medium-stiff peaks form
Spread whipped cheesecake mixture on top of bars
Drizzle with melted Biscoff and sprinkle with crushed Biscoff cookies
Refrigerate until ready to serve
