Make chia egg and set aside to thicken.
Heat coconut oil, coconut sugar, maple syrup, and vanilla over the stove until fully melted.
Combine oats and quinoa in a large bowl.
Blend half of the mixture until it reaches a flour consistency, then add back to the bowl.
Pour oil mixture into the bowl and stir to combine.
Add chia seeds, flaxseed, and chia egg and continue to mix until fully incorporated.
Spread mixture completely flat on a large baking tray.
Bake at 300 for 30-40 minutes, shaking every 10 minutes.
Let cool completely and break into large clusters.
