Preheat oven to 425F and spray a baking sheet with oil
Spread sweet potato slices on the baking sheet, spray tops lightly with oil, and sprinkle with salt and pepper
Bake for 15-16 minutes, flipping once at the halfway point, until tender but still firm
Add avocado oil to a large skillet over medium heat
Once hot, add garlic and stir for about a minute until fragrant
Add onion and bell pepper and sauté for 3-4 minutes until softened
Add ground beef to the pan and mash into small pieces, cooking through
Add soy sauce, ketchup, tomato paste, mustard, chili powder, salt and pepper to the beef mixture
Stir to combine and taste, adjusting seasonings as needed
Shred or chop the cabbage finely and place in a bowl
Toss cabbage with red wine vinegar, avocado oil, and salt
Assemble bowls with cabbage on the bottom, sweet potato slices, sloppy joe mixture, and pickled onions on top
