Honey Walnut Popcorn Shrimp
  1. Whisk mayo, condensed milk, honey, lemon juice, and a pinch of salt until smooth. Set aside.

  2. In a large bowl, mix ice-cold sparkling water, cornstarch, flour, paprika, garlic powder, salt, and pepper. Cover and chill in the fridge until ready to fry.

  3. Toss shrimp with cornstarch and baking powder until evenly coated.

  4. Bring water, honey, and sugar to a boil, then reduce to medium and simmer until lightly golden and liquid is reduced by half. Add walnuts, immediately toss to coat. Spread candied walnuts on a parchment-lined sheet to cool through.

  5. Heat 4–5 cups of oil to 400°F.

  6. Working in batches, dip dredged shrimp into batter, then fry for 2–3 minutes until lightly golden and crispy (longer for larger shrimp). Remove shrimp and drain well.

  7. Plate shrimp, top with broken up candied walnuts and green onions, and serve with sauce for dipping. Enjoy!
