Chicken Caesar Jacket Potato
  1. Pierce the potatoes with a fork. Wrap in kitchen paper and microwave for 3 minutes.

  2. Transfer to foil, brush with olive oil, and season with sea salt.

  3. Wrap in foil and cook in the air fryer at 180°C for 45 minutes.

  4. Remove foil and air fry for an extra 10 minutes to crisp the skin. (Time may vary depending on potato size.)

  5. Season chicken with Italian herbs, garlic seasoning, and a drizzle of olive oil.

  6. Pan-fry until golden and fully cooked. Let cool, then slice.

  7. Mix sliced chicken with 3 tbsp Caesar dressing and set aside.

  8. Cut pitta bread into small squares.

  9. Spray with olive oil and season with Italian mixed herbs.

  10. Air fry at 180°C for 6 minutes until crispy.

  11. Cut open each potato and mash the inside with garlic butter. Season with salt and pepper.

  12. Grate some Parmesan onto the mashed potato before adding toppings.

  13. Spoon over the Caesar chicken mix.

  14. Add shredded iceberg lettuce, crispy bacon, and pitta croutons.

  15. Drizzle with more Caesar dressing.

  16. Finish with an extra grating of Parmesan on top.
