One Pot Mexican Lentils
  1. Heat olive oil in a large pot over medium heat.

  2. Add diced onion and minced garlic, sauté until translucent.

  3. Stir in cumin, chili powder, and tomato paste.

  4. Add lentils, black beans, corn, sweet potatoes, tomatoes, and broth.

  5. Bring to a boil, then reduce heat and simmer for about 30 minutes or until lentils are tender.
