Chinese No-Chicken Salad
  1. In a large nonstick pan over medium-high heat, add the olive oil and shredded tofu, and sauté until golden brown. Season lightly with salt and pepper. Set aside and let cool.

  2. To a large serving bowl, combine the lettuce, Napa cabbage, purple cabbage, carrots, green onions, mung bean sprouts, drained mandarin oranges, almonds, and sesame seeds.

  3. Transfer the cooked tofu into the bowl.

  4. Toss all ingredients with Sesame Vinaigrette.

  5. Top the salad with the crunchy noodles at the end so they stay crisp, and enjoy!
