Instructions
Prep the Plums: Toss sliced plums with olive oil, honey, thyme, and a pinch of salt. Roast at 200°C (392°F) for 12–15 minutes until softened and caramelized. Let cool slightly.
Wrap the Brie: Roll out puff pastry and place the cold brie in the center. Spoon half the roasted plums on top. Fold the pastry edges up and over the brie, leaving the top exposed.
Egg Wash & Bake: Brush pastry edges with egg wash. Bake at 200°C (392°F) for 20–25 minutes until golden and bubbling.
Top & Serve: Spoon remaining roasted plums over the hot baked brie. Garnish with thyme sprigs and a crack of black pepper. Serve warm with crusty bread or crackers.
