Ground Beef Shawarma Bowls
  1. Rinse the 1 cup Basmati rice under cold water until the water runs clear. In a medium pot, combine the rice, 2 cups water/broth, ½ tsp turmeric, and ½ tsp salt. Bring to a boil, then reduce to a low simmer. Cover and cook for 15–18 minutes. Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork.

  2. While the rice simmers, heat a large skillet over medium-high heat. Add the 1 lb ground beef. Use a wooden spoon to break the meat into small crumbles. Cook until the beef is mostly browned and the fat has rendered.

  3. Add the minced garlic, cumin, coriander, smoked paprika, and cinnamon to the skillet. Stirring frequently, cook for 2–3 minutes. Season with salt and pepper.

  4. Start with a generous base of the golden turmeric rice. Top with a portion of the shawarma beef. Arrange the diced cucumbers, tomatoes, and pickled onions around the edges.

  5. Drizzle the entire bowl with tahini sauce or a dollop of hummus. Garnish with plenty of fresh parsley and a squeeze of fresh lemon juice.
