Instant Pot Steak and Kidney Pudding
  1. Saute beef, kidney, onion, mushrooms.

  2. Add water, wine, pepper, Worcestershire sauce, garlic

  3. Pressure Cook 35min npr

  4. Thicken with cornflour. Allow to cool.

  5. Butter 2 pint pudding bowl

  6. Blend suet and flour with just enough water

  7. Roll out the pastry into a circle big enough to line the basin. Cut out a quarter like a pizza slice, this is for the lid. Use the ¾ circle to line the basin and press it into the corners. Fill with the meat and make the last ¼ of the pastry into a ball and roll it out to make the lid then seal the pastry with a bit of water. Trim the edges if you need to. Cover with a buttered lid if you have one or with a layer of greaseproof paper and a layer of tin foil quite loosely and scrunch the edges up under the top rim of the basin.

  8. Fill with meat, keeping some gravy for serving.

  9. Pressure Cook on high for 120min npr on a trivet with water ½ way up bowl
