Preheat your oven to 220°C (425°F).
Remove outer leaves from the cauliflower and slice it into thick “steaks” (about 1-inch thick).
In a small bowl, mix olive oil, garlic, paprika, cumin, salt, pepper, and chili flakes.
Place the cauliflower steaks on a baking tray lined with parchment paper.
Brush both sides generously with the seasoning mixture.
Roast for 25–30 minutes, flipping halfway through, until golden brown and crispy on the edges.
Remove from oven, drizzle with fresh lemon juice, and sprinkle parsley on top.
