Strawberry Shortcake Cookies
  1. Preheat oven to 375°F.

  2. In a medium bowl, combine strawberries, lemon juice, and 2 tbsp sugar. Let sit while you prep the dough.

  3. In a large bowl, whisk together flour, baking powder, salt, and remaining 7 tbsp sugar. Cut in butter with a pastry blender or fingers until it resembles coarse crumbs.

  4. Stir in just enough cream until the dough comes together, then gently fold in the strawberry mixture. Do not overmix.

  5. Scoop dough onto a parchment-lined baking sheet using a 1 ½-inch scoop. Sprinkle generously with sugar.

  6. Bake for 24–25 minutes until golden. (Store extra dough in the fridge between batches.)

  7. Best enjoyed warm. To reheat: 325°F for 3–5 minutes in an air fryer or oven brings them right back to fresh-baked perfection.
