Same-day Sourdough Bread
  1. Autolysis (Flour & Water Only)

  2. Add levain

  3. Add salt

  4. 1 set of stretch and fold

  5. Coil fold # 1

  6. Coil Fold # 2

  7. Coil Fold # 3

  8. Cover the dough and continue to proof it at room temperature until it has grown to ~ 1.5 - 1.8 X its original size

  9. Shape the dough

  10. Cover the dough and place it in the freezer for 1 hour

  11. Preheat your oven to 250°C with baking steel

  12. Score the dough, bake covered for 20 min, then uncovered for another 20–min until golden brown
