Cover the dough and continue to proof it at room temperature until it has grown to ~ 1.5 - 1.8 X its original size
Shape the dough
Cover the dough and place it in the freezer for 1 hour
Preheat your oven to 250°C with baking steel
Score the dough, bake covered for 20 min, then uncovered for another 20–min until golden brown
