Salted Caramel Apple Crumb Bars
  1. In a saucepan, combine apples, lemon juice, both sugars, cinnamon, nutmeg, salt, and cornstarch. Cook over medium heat for 8–10 minutes, stirring occasionally, until apples are tender and juices have thickened. Let it cool while you make the crust.

  2. Preheat oven to 350°F (175°C). Line a 9×13" pan with parchment, leaving an overhang for easy removal. In a large bowl, whisk together flour, brown sugar, baking powder, and salt. Cut in butter with a pastry cutter or your fingers until mixture resembles coarse crumbs. Stir in vanilla. Press about two-thirds of this mixture into the bottom of the pan to form the crust. Bake for 10–12 minutes, until lightly golden.

  3. Spread the apple filling evenly over the warm crust. Sprinkle the remaining crumb mixture over the top. Bake for 30–35 minutes, until the topping is golden brown and bubbling around the edges. Cool completely.

  4. In a medium saucepan, heat sugar over medium heat until it melts and turns amber. Whisk in butter until combined. Slowly pour in cream (it’ll bubble up!) and whisk until smooth. Stir in salt and let cool slightly.

  5. Drizzle cooled bars with caramel and sprinkle a few flaky sea salt crystals on top. Cut into squares once fully cooled.
