Add ground beef to a bowl and season with salt, pepper, onion powder, oregano, paprika, and cayenne pepper.
Process together yellow onion, garlic cloves, walnuts, and parsley, then add to the meat mixture and mix well. Let sit for 1 hour.
Divide the mixture into 5 equal sized balls, roll into tortillas, and cut into pinwheels.
Skewer the sliced pinwheels and place on a sheet pan with cherry tomatoes and red onion wedges.
Drizzle veggies with olive oil, salt, and chili flakes.
Bake in the oven at 400F for 25-27 minutes.
For the yogurt spread, mix Greek yogurt with parsley, mint, salt, pepper, olive oil, and lemon juice.
Garnish with fresh parsley, sumac or Aleppo pepper.
